Our Turkeys
Our Kelly Traditional White turkeys arrive at our farm as day-old chicks from June to July. This obviously means that they quickly settle into their safe, warm traditional Essex barn with plenty of natural light and are bedded up on straw grown on our farm to keep them clean and happy.
In order to ensure the flavour of your Christmas turkey is exactly as you would like it, we start by selecting from six slow-growing strains which, when grown to full maturity, provide a weight range of four kilograms to 11 kilograms.
We feed our birds on a natural cereal diet wholly-supplied from Heygates Country Feeds (whom we sell our wheat to). Then, when the time comes we prepare our turkeys on the farm and dry pluck them entirely by hand because it protects the birds’ skin and helps them to cook perfectly.
Once we’ve plucked the birds we hang them for between 7 and 10 days at a steady temperature of between 2 and 4°C. This specifically allows the meat to relax and become even more tender while the natural flavours – unique to a Traditional Farm Fresh Turkey – develop.
This age-old traditional method is proven to give the meat the finest texture and a great taste, altogether perfect for making the best meal for you at Christmas.
We are regularly inspected by trading standards and comply with all of DEFRA’s requirements to ensure the safety and wellbeing of our turkeys and of course our customers.
